Additional ingredients may be added to the butter before insertion:
- Chopped garlic and parsley
- fine herbs such as tarragon or chives
- liver pate.
Ingredients you will need
- Chicken breasts 4x150g
- Butter 100g
- Seasoned flour 25g
- Eggs 2
- Breadcrumbs 100g
Step 1- Make an incision along the thick sides of the Chicken breasts, insert 25g cold butter into each. Season.
Step 2-Pass through seasoned flour, egg wash and Breadcrumbs, ensuring complete coverage. Egg wash and crumb twice if necessary.
Step 3- Deep-fry until completely cooked. A probe in the thickest part will read 75oC +, and the will run clear when the chicken. Drain and the chicken Kiev's are now ready to eat.
The butter must be pushed well into the chicken breasts , and the incision must be sealed, or the butter will leak out during cooking.
