Hi everyone today ill be telling you how to make Chantilly cream, now Chantilly cream is really easy to make and hard not to mess up and this recipe is really simple.

Ingredients you will need

Double cream      500mlCaster  sugar       100gVanilla essence    A few drops to taste
Step 1-Place all the ingredients in a bowl.

Step 2-Whisk over ice until mixture forms soft peaks.

Step 3-If your using a mechanical mixer, stand and watch until the mixture is ready-do not leave unattended as the mix will over-whip quickly, curding the cream.

Step 4-Cover and place in the fridge immediately.

How to make apple fritters

Hi everyone today ill be telling you how to make apple fritters, Now this recipe is quick and easy to make. Also this recipe will make 4 portions.

Ingredients you will need
Cooking apples                400gflour ,as neededfrying batter                    150g
Step 1- Peel and core the apples and cut into 0.5cm rings

Step 2-Pass through flour, shake off the surplus.

Step 3-Dip into frying batter

Step 4-Lift out with the fingers, into fairly hot deep fat: 185oC.

Step 5-Cook for about 5 minutes on each side.

Step 6-Drain well on kitchen paper, dust with icing sugar.

How to make Chicken Kievs

hi everyone today im going to tell you how to make Chicken Kiev's, This recipe is quick and wont take long to make.


Additional ingredients may be added to the butter before insertion:
Chopped garlic and parsley fine herbs such as tarragon or chivesliver pate.
Ingredients you will need
Chicken breasts 4x150gButter                  100gSeasoned flour      25gEggs                     2Breadcrumbs        100g
Step 1- Make an incision along the thick sides of the Chicken breasts, insert 25g cold butter into each. Season.

Step 2-Pass through seasoned flour, egg wash and Breadcrumbs, ensuring complete coverage. Egg wash and crumb twice if necessary.

Step 3- Deep-fry until completely cooked. A probe in the thickest part will read 75oC +, and the will run clear when the chicken. Drain and the chicken Kiev's are now ready to eat.  

Chefs tip

The butter must be pushed well into the chicken breasts , and the incision must be sealed, or the butter will leak out during cooking.

The ingredients you will need

100g plain flour1 large egg300ml milk Step 1-Sift the flour into a large mixing bowl and make a well in the centre.Drop the egg into the well and beat with a balloon whisk, gradually drawing some of the flour into the mixture. Step 2-Slowly pour in the milk, whisking all the time and continuing to draw in the flour until you have a smooth batter. It should be the consistency of single cream. How to make a chicken tikka

hi everyone today I will be telling you how to make a chicken tikka curry,This recipe will make 4 portions.

Ingredients you will need

Chicken, cut for sauté  1x1/2kg
natural yogurt             125ml
grated ginger              1 tsp
ground coriander         1 tsp
ground cumin              1 tsp
chili powder                 1 tsp
clove garlic, crushed and chopped 1
Lemon juice of 1/2 a lemon
tomato puree               50g
onion, finely chopped    50g
oil                               60ml
lemon wedges              4

Step 1- Place the chicken pieces into a suitable dish.

Step 2-Mix together the yogurt, seasoning, spices, garlic, lemon juice and tomato puree.

Step 3- Pour this over the chicken, mix well and leave to marinate for at least 3 hours.

Step 4-In a suitable shallow tray,add the chopped onion and half the oil.

Step 5-then gently cook the chicken pieces in moderate oven at 180oC for 20-30 minutes.

Step 6-Baste with the remaining oil.

How to make braised rice

Hi everyone today I will be telling you how to make braised rice.

The ingredients you will need

Butter or oil                   50gOnion, chopped              25grice, long grain               300gchicken stock                 600ml salt, mill pepper butter, to finish              50g
Chef's tip

Cook the rice for the exact time specified in the recipe. If it cooks for longer, it will be overcooked and the grains will not separate.

Try something different

You can add wild mushrooms about 50-100 g for 4 portions
Step 1-Place the butter or oil into a small sautese.Add the onion.

Step 2-Cook gently without colouring for 2-3 minutes
