375g self raising flour 1 tablespoon caster sugar 70g butter 250ml milk First preheat the oven to 220 C/Gas 7. Next dust a baking with a little self-rising flour. Then sift the 375g of flour into a medium bowl and add the caster sugar. Then using your fingertips, rub the butter into the mixture until it resembles fine breadcrumbs. Then gradually add the milk and use a blunt knife to mix until the dough begins to come together. Next turn out the dough onto a lightly floured surface and knead gently to form the dough. Next flatten the dough with the palm of your hand until about 2cm thick. Then use a 5cm round cutter to cut out your scones. Then arrange your scones on the prepared baking tray 1cm apart. Lastly bake in the preheated oven for 14 to 16 minutes or until your scones golden brown and have risen. Then remove from the oven and serve warm or you could allow them to cool and serve cold.

Serves 1-15 cookies


200g softened butter 300g soft brown sugar 2 tsp vanilla extract 2 eggs 300g self-raising flour 80g cocoa powder 1 tsp baking powder 300g choc chips First preheat the oven 180 c/ gas 4 then cream the butter and sugar until light and fluffy, then beat in the vanilla extract and eggs.Next in a separate bowl sift the flour, cocoa  and baking powder together. Then add flour mix to the creamed mix in stages ( a third at a time)and mix well. then fold in the chocolate chips until just combined. Next spoon a tablespoon of the mixture on to a baking tray and just let it drop off the spoon,repeat until you have used up all the cookie mixture. Then bake in a preheated oven for 12 minutes, when you remove the cookies from the oven they will still be soft, leave to cool completely on the baking tray, where they will continue to cook slightly, when completely cold move to a cooling rack, then enjoy Mmmm.
