- potato's 400g
Step 2-Cut into slices 1 cm thick and 5cm long.
Step 3-Cut the slices into strips 5x1x1cm.
Step 4-Wash well and dry in a cloth.
Step 5- Cook in a frying basket without colour in moderately hot oil (165oC).
Step 6- Drain and place on kitchen paper on trays until required.
Step 7-When required, place in frying basket and cook in hot oil (185oC) until crisp and golden.
Step 8-Drain well, season lightly with salt and serve.
Healthy eating tips
- Chopped potatoes may be blanched twice, first at 140oC, followed by a re-blanch at 160oC until lightly coloured.
- Blanch in a steamer until just cooked, drain and dry well-final temperature 165oC.
