How to make a Bulgar salad with fruit and nuts

Hi everyone today ill be telling you how to make a tasty and healthy bulgar salad with fruit and nuts.

                                           
                                                                       Serves 6


Ingredient's you will need
  • 100g dried apricots
  • 50ml fresh orange juice
  • 250g bulgar wheat
  • 300ml vegetable stock
  • 2 tablespoons olive oil
  • 2 brunches spring onions
  • grated rind of 1/2 lemon
  • juice of 1 lemon
  • seasoning
  • 50g whole skinned almonds
Step 1-Slice the apricots. Add to the orange juice and soak for 1 hour or until the apricots are soft.

Step 2-Measure the bulgar into a large bowl. Bring the vegetable stock to the boil. Pour over the bulgar, then cover the bowl with a cloth.

Step 3-Leave to stand until the liquid is absorbed-about 20 minutes.

Step 4-Mix in the olive oil and cool.

Step 5-Chop the spring onions; add to the bulgar with the apricots and orange juice.

Step 6-Add the rind and juice of the lemon and season.

Step 7-Cut the almonds into slivers. Toast in hot oven, or under the grill,until golden,add to the salad
